Back in 2001, the hotel industry was in something of a crisis, particularly smaller boutique hotels and high-end chains, which were dealing with a number of unforeseen problems that had hit the hospitality trade – not least of which were the terrorist attacks of September 11th that year, the SARS scare and the outbreak of foot and mouth across the country.

In a sector that was already known for its poor staff retention, difficult working hours and low wages, this was bad news indeed.
